Description
Ghee is defined as a clarified butterfat product traditionally produced in India from cows’ or buffalo milk, obtained by heating cream or butter to evaporate moisture and develop a characteristic flavor. It is characterized by low water activity, which inhibits microbial growth, and can also be made from the milk of other mammals such as goats and sheep.
